Training, transmitting and attracting new talent to the craft: that’s the challenge taken up every day by Baguette Academy, a pioneer in online training for bakers and pastry arts.
At a time when recruitment needs in the industry are pressing, one question often comes up: “How can you learn a manual trade online?”
Baguette Academy spoke at EdTechDay in Lyon on November 5, 2025, on the theme: “How to build a hybrid training course to meet the need for attractiveness in a sector (Bakery)?”
At this event, the Baguette Academy director shared his expertise with Olivier Cortyl (HR Director Teract – Boulangerie Louise) and Olivier Rejany (Associate ONE Business School).
The workshop (quickly sold out!) focused on a hybrid training program developed in partnership between the three structures, around the Bakery CAP.

At Baguette Academy, we’ve developed a unique teaching method based on the complementary nature of online training and hands-on workshop practice.

This approach makes it possible to open up training and customize courses to suit the constraints of the learner and his or her company.
It also offers a concrete response to the HR needs of jobs in short supply: more flexible, more attractive training that’s closer to the realities of the field… and retraining employees who then stay with the company to pursue their careers! CFAs are seeing their numbers of young people decline due to the falling birth rate and the impact of training funding. Recruiting and training retrained employees is an opportunity for the bakery industry.
The success of a hybrid course depends above all on the synergy of the partners.
Our collaboration with Teract – Boulangerie Louise and ONE is proof of this: together, we have designed an agile program, capable of adapting to company expectations, pedagogical needs and learner constraints. For example, we didn’t schedule any training during the Christmas and galette sales periods, which require a lot of energy and work in the company.
