of the course

MANUFACTURING OPERATOR IN INDUSTRY OR BAKERY PRODUCTION STAFF

This training aims to deepen understanding of bakery manufacturing processes to enhance production and improve the quality of finished products. It focuses on:

  • Designate the different phases of kneading, including kneading to achieve optimal kneading of your dough.
  • Define the fermentation in the bread making process to be able to conduct the dough fermentation.
  • Choose a fermentation method to use for a given product.
  • Expose the importance of the steps before cooking, temperatures and cooking time, unloading, and demolding to complete the cooking of your products.
  • Propose appropriate corrective actions to address manufacturing process issues (kneading, baking, fermentation, etc.).
  • Itemize the steps of making bread dough adapted to a baguette (ingredients, manufacturing parameter, recipe, etc.) to make French baguettes.

Participants will be able to choose correct answers in multiple-choice questions on bakery manufacturing processes.

TEACHING METHOD

The training takes place online in an asynchronous, individual, and personal manner on a training platform. It is interactive and includes text, image, sound, video resources, activities, and quizzes for validating skills. You can take the courses in any order and repeat them as many times as necessary.

Our educational team will follow your progress and remain at your disposal throughout the training.

EVALUATION MODALITIES

A training path consists of one or more courses (modules).

For each course, a final quiz is available to validate the skills (3 attempts possible). By achieving a minimum of 80% correct answers on the final evaluation, you will validate the concerned course.

Completing all the modules that make up the training program will attest to your diligence within the training.
