The Fundamentals of Industrial Bread Making – In-Person Course

Objectives
of the course

The purpose of this training program is to enhance the knowledge and understanding of the bread-making process among your employees working on your production line. The learning objectives, number of hours, and program content are fully customizable to meet the needs of your company and your teams.

  • Identify and describe the technical characteristics of the raw materials used in breadmaking, as well as their role in dough behavior (the effect of gluten, principles of rheology, etc.).
  • Identify and describe the steps in the bread-making process, as well as the factors that influence it (raw materials, machinery, methods, measurements, environment, labor—the 6Ms).
  • Apply kneading techniques using the appropriate settings (time, speed, hydration) on small kneading machines.
  • Analyze work-related situations involving the production line and any observed discrepancies, and propose corrective measures.

Attainment of objectives is measured by the validation of a multiple-choice questionnaire at the end of training.

Partie 1

Raw Materials

  • Macro-ingredients: flour, water, salt… (technological roles and effects on the dough);
  • Leavening agents: yeast, sourdough… (how they work and their effect on fermentation);
  • Micro-ingredients: gluten, dough conditioners, and processing aids (functions and impacts on the process).
Partie 2

The Steps in the Bread-Making Process

  • The key steps in the process: kneading, hydration, dough temperature, proofing, fermentation, and baking;
  • The impact of raw materials and settings on dough behavior;
  • Identifying the main production variances and their causes.
Partie 3

Behavior of the Dough During Kneading

  • Monitoring and analysis of several small laboratory mixers to study dough behavior under various conditions: insufficient hydration, under-mixing, over-mixing, fermentation issues, etc.
  • Rheological analysis and observation of dough behavior.
Partie 4

Hands-On Experience on the Production Line

  • On-site observation of the manufacturing process and analysis of the issues encountered.
  • Summary of key points and discussion of specific cases encountered in production.

TEACHING METHOD

This training course is conducted exclusively in person.

This training course consists of two parts:

  1. A theoretical training course to learn the fundamentals of bread making: This first step allows participants to build on their technical knowledge and gain a better understanding of the various stages of the bread-making process.
  2. Putting what they’ve learned into practice directly on the job: Participants are invited to visit the production line to observe the processes, handle the dough, and tackle real-world situations. This hands-on experience allows them to apply the concepts covered during the theoretical portion of the course, while discussing real-world scenarios encountered in production.

The training is led by an instructor who specializes in bread, pastries, and desserts and has hands-on expertise and experience in the industrial sector.

EVALUATION METHODS

A quiz will be administered at the end of the hands-on training to certify completion of the course. By achieving a score of 80% on the final assessment, employees will be certified as having completed the in-person training.
